- 1 medium or large avocado
- 2 small eggs
- sea salt, to taste
- fresh cracked black pepper, to taste
- 2 sliced of bacon, cooked then crumbled (optional)
- 2 slices of toast (optional)
- hot sauce (optional)
- fresh chopped tomatoes (optional)
Directions
- Preheat the oven to 425°.
- Slice the avocados in half & remove the pit. If not enough space for the egg, you may need to scoop out about 2 tablespoons of flesh from the center of the avocado, just enough so the egg will fit snugly in the center.
- Place the avocados in a small baking dish. Do your best to make sure they fit tightly.
- Crack an egg into each avocado half. Try your best to crack the yolk in first then let the egg whites spill in to fill up the rest of the "boat".
- Bake for 15-20 mins. Cooking time will depend on the size of your eggs & avocados. Just make sure the egg whites have enough time to set & let the egg cook to your desired consistency.
- Remove from oven & top with your choice of garnishes. Enjoy!
